Chive Carrots have such rich garden-fresh flavor, you'd never guess how inexpensive this dish is to prepare. Relates Dorothy Pritchett, field editor from Wills Point, Texas, "My husband and I both love the garlic in this colorful side dish."

Ingredients:

  • 1 pound carrots, cut into 2-inch julienne strips
  • 1 teaspoon minced garlic
  • 1 tablespoon vegetable oil
  • 1 tablespoon butter
  • 2 tablespoons minced fresh chives or parsley

Directions:

In a large skillet, saute carrots and garlic in oil and butter for 3 minutes. Reduce heat; cover and cook for 10 minutes or until carrots are crisp-tender. Sprinkle with chives. Serve immediately. Yield: 4 servings.
