Ingredients

  • 2 cups frozen peas
  • 1/3 cup grated Parmesan cheese
  • 3 cooked Wright® Brand Bacon, chopped

  • 1/4 cup reduced-fat sour cream
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 2 garlic cloves
  • 1 to 2 teaspoons minced chipotle pepper in adobo sauce
  • 1/4 teaspoon pepper
  • Assorted fresh vegetables or crackers

Directions

  • In a small saucepan, bring 4 cups water to a boil. Add peas; cover and cook for 1 minute. Drain and immediately place peas in ice water. Drain and pat dry.
  • Place peas in a food processor; add the cheese, bacon, sour cream, oil, lime juice, garlic, chipotle pepper and pepper. Cover and process until smooth. Serve with vegetables or crackers. Yield: 1-1/2 cups.

Nutritional Facts 1/4 cup (calculated without vegetables) equals 129 calories, 8 g fat (2 g saturated fat), 11 mg cholesterol, 207 mg sodium, 8 g carbohydrate, 2 g fiber, 6 g protein. Diabetic Exchanges: 1-1/2 fat, 1/2 starch.

Parmesan Pointers

When a recipe calls for shredded Parmesan cheese, use the cheese found in bags in the grocery store dairy section. Shredded Parmesan is often used in salads or soups where the shreds make a pretty garnish. If grated Parmesan is called for, use the finely grated cheese sold in containers with shaker/pourer tops. This type works well in lasagna and casseroles. (You can substitute either shredded or grated Parmesan in equal proportions in your favorite recipes.) If you decide to buy a chunk of Parmesan cheese and grate your own, be sure to use the finest section on your grating tool. You can also use a blender or food processor. Simply cut the cheese into 1-inch cubes and process 1 cup of cubes at a time on high until finely grated.

Enjoy this recipe with a light-bodied white wine such as Sauvignon Blanc or Pinot Grigio.

This was not so great. Something didn't quite go, I don't know if it was the sour cream or the lime. My blender also didn't get it as creamy as I think it needed to be.
