Chilled Seafood Salad Recipe

Ingredients

  • 8 Boston lettuce or spinach leaves
  • 4 ounces cooked shrimp, equal to 1/2 cup
  • 4 ounces large scallops, cooked
  • 2 medium celery stalks, sliced
  • 1 green onion, finely chopped
  • 1 tablespoon chopped parsley
  • 1 tablespoon fresh lemon juice
  • 1 medium cucumber, sliced
  • 2 cups cherry tomatoes, about 12 each
  • 2 fresh lemons, cut into wedges

Directions

  • Place lettuce or spinach on 4 plates.
  • In medium size bowl, mix shrimp, scallops, celery, green onion, parsley, and lemon juice.
  • Divide mixture evenly into 4 servings and place on top of lettuce lined plates.
  • Divide cucumber and cherry tomatoes evenly between serving dishes.
  • Garnish each dish with lemon wedges.
