Chili Mac Recipe

Ingredients

  • 2 cups uncooked whole wheat elbow macaroni
  • 1 pound lean ground turkey
  • 1 small onion, chopped
  • 2 to 3 jalapeno peppers, seeded and chopped
  • 2 teaspoons olive oil
  • 2 garlic cloves, minced
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (14-1/2 ounces) diced tomatoes, undrained
  • 1 can (8 ounces) tomato sauce
  • 1 to 2 tablespoons hot pepper sauce
  • 2 to 3 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon pepper
  • 3/4 cup shredded reduced-fat cheddar cheese

Directions

  • Cook macaroni according to package directions. Meanwhile, in a large nonstick skillet coated with cooking spray, cook the turkey, onion and jalapenos in oil over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain.
  • Add the beans, tomatoes, tomato sauce, pepper sauce and seasonings. Drain macaroni; stir into turkey mixture. Cook over medium-low heat for 5 minutes or until heated through.
  • Sprinkle with cheese. Remove from the heat; cover and let stand until cheese is melted. Yield: 6 servings.

Editor's Note: Wear disposable gloves when cutting hot peppers; the oils can burn skin. Avoid touching your face.

Nutritional Facts 1-1/2 cups equals 396 calories, 12 g fat (4 g saturated fat), 70 mg cholesterol, 581 mg sodium, 45 g carbohydrate, 9 g fiber, 28 g protein. Diabetic Exchanges: 3 lean meat, 2-1/2 starch, 1 vegetable, 1 fat.

We loved this. The only change I made was I increased the cheese. It's delicious as it is though. Garnished with dollop of sour cream and some taco sauce. It was YUMMY. I will definitely be making this again. It is going in my printed recipe book of tried and true favorites. Thanks for sharing.

I left out the spicy ingredients because of the kids, but it was still very good. Both my husband and one of my super finicky kids went back for seconds.

I put Jalapeno peppers on the side and added a green bell pepper and 2 packs of prepared chili seasoning, used 2/3 pinto beans - 1/3 black and increased the recipe to feed 40. It was tasty and popular with all.

Quick, easy and filling recipe. Always looking for ways to use ground turkey and beans so this was great. Can't always handle spicy foods so I only used one jalapeno pepper and did the minimum suggestion on the other spices. Glad I did. Even my husband, who can always handle spicy things, was glad I didn't use more spices. I believe I'll use rice next time, instead of the pasta. I didn't add the cheddar to the pan, but kept it separate so we can use it on top of our servings as we eat the rest of the leftovers. Thanks for sharing your recipe!

I substituted 2 teaspoons of Tabasco Chipotle sauce for the hot sauce and that gave it a nice smoky flavor.

Simply wonderful! I made a lot of changes and this recipe is very forgiving. i used hamburger meat, forgot the tomatoes, used the green onions instead of white or yellow, and left out the hiot pepper sauce and allowed the hubby to add according to his own taste b/c when making something spicey the next day when you heat up left overs it is still spice but 10 times more so. I plan on trying this recipe again and make even more changes by putting a can of corn in it, just to add another texture. i may try using rice instead of pasta next time also just to see how it will be. When i reheated the left overs my pasta was a little mushy/nasty (cheap cheap pasta makes left overs cry) SO i also think that mebbe a little less pasta and adding to bowls before serving. will also try adding some cilantro next time. you can really try to add or leave out or substitute anything i think in this recipe.

This is a great chili recipe. The beans and macaroni make it very filling, and because it's made with turkey instead of beef it has much less fat than regular chili. Great fall recipe, the spices give it a wonderful heat.

Really enjoyed this and will make again! It's different. All common ingredients I already had, but you can make substitutions easily and still comes out great. Leftovers won't last long this time.

Absolutely wonderful! I added a little Velveeta once everything was combined to make it good and creamy (about 1/4 pound), and also used pinto beans instead. Definitely a keeper!

Very tasty! I doubled it and froze some for later (without the pasta). Reminder * Use gloves/plastic bags when cutting jalapenos. I forgot and paid for it shortly after!

So delicious! I used Ro-Tel tomatoes with chilies in place of the jalapenos diced tomatoes, just because I had some in the pantry. And I doubled the tomato sauce on the advice of other reviews. This is definitely going into the cold-weather rotation!

My family likes this twist on chili. The black beans really give it substance. I add a little extra water to it though because the noodles tend to absorb the liquid leaving it a little dry.

Tasty and balanced with macaroni and black beans. We added a chopped bell pepper because we love the extra flavor. If making ahead, add extra sauce.
