Chili Mac Recipe

Ingredients

  • 2 cups uncooked whole wheat elbow macaroni
  • 1 pound lean ground turkey
  • 1 small onion, chopped
  • 2 to 3 jalapeno peppers, seeded and chopped
  • 2 teaspoons olive oil
  • 2 garlic cloves, minced
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (14-1/2 ounces) diced tomatoes, undrained
  • 1 can (8 ounces) tomato sauce
  • 1 to 2 tablespoons hot pepper sauce
  • 2 to 3 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon pepper
  • 3/4 cup shredded reduced-fat cheddar cheese

Directions

  • Cook macaroni according to package directions. Meanwhile, in a large nonstick skillet coated with cooking spray, cook the turkey, onion and jalapenos in oil over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain.
  • Add the beans, tomatoes, tomato sauce, pepper sauce and seasonings. Drain macaroni; stir into turkey mixture. Cook over medium-low heat for 5 minutes or until heated through.
  • Sprinkle with cheese. Remove from the heat; cover and let stand until cheese is melted. Yield: 6 servings.

Editor's Note: Wear disposable gloves when cutting hot peppers; the oils can burn skin. Avoid touching your face.

Nutritional Facts 1-1/2 cups equals 396 calories, 12 g fat (4 g saturated fat), 70 mg cholesterol, 581 mg sodium, 45 g carbohydrate, 9 g fiber, 28 g protein. Diabetic Exchanges: 3 lean meat, 2-1/2 starch, 1 vegetable, 1 fat.

Good recipe for something different. I doubled the amount of elbows. Still spicy, but good flavor.

I put Jalapeno peppers on the side and added a green bell pepper and 2 packs of prepared chili seasoning, used 2/3 pinto beans - 1/3 black and increased the recipe to feed 40. It was tasty and popular with all.

Quick, easy and filling recipe. Always looking for ways to use ground turkey and beans so this was great. Can't always handle spicy foods so I only used one jalapeno pepper and did the minimum suggestion on the other spices. Glad I did. Even my husband, who can always handle spicy things, was glad I didn't use more spices. I believe I'll use rice next time, instead of the pasta. I didn't add the cheddar to the pan, but kept it separate so we can use it on top of our servings as we eat the rest of the leftovers. Thanks for sharing your recipe!

for us I won't take the seeds out of the jalapenos next time, but it was very tasty as stated.

I substituted 2 teaspoons of Tabasco Chipotle sauce for the hot sauce and that gave it a nice smoky flavor.
