Chili Cheese Dog Casserole Recipe

Ingredients

  • 1 package (8-1/2 ounces) corn bread/muffin mix
  • 1 cup chopped green pepper
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1 tablespoon olive oil
  • 1 package (1 pound) hot dogs, halved lengthwise and cut into bite-size pieces
  • 1 can (15 ounces) chili with beans
  • 2 tablespoons brown sugar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1 cup (4 ounces) shredded cheddar cheese, divided

Directions

  • Prepare corn bread batter according to package directions. Spread half the batter into a greased 8-in. square baking dish; set aside.
  • In a large skillet, saute the green pepper, onion and celery in oil until crisp-tender. Stir in hot dogs; saute 3-4 minutes longer or until lightly browned. Stir in the chili, brown sugar, garlic powder and chili powder; heat through. Stir in 3/4 cup cheese.
  • Spoon over corn bread batter; top with remaining corn bread batter. Sprinkle remaining cheese over the top.
  • Bake, uncovered, at 350° for 28-32 minutes or until a toothpick inserted near the center comes out clean. Let stand for 5 minutes before serving. Yield: 6 servings.

Cheese Tip

Select sharp cheddar when using packaged shredded cheese for recipes that you'd like to have a bolder flavor. If you will be shredding cheese at home from bulk cheddar, you can choose from mild, medium, sharp and extra sharp.

When buying bulk cheese, 4 ounces equals 1 cup shredded.

Store cheese in an airtight containers, plastic bags or plastic wrap in the refrigerator (about 4 months for soft cheeses and 6 months or hard cheeses).

Cheese can be frozen for longer storage time. Because the freezing process changes the cheese's texture slightly, it is best to use it in cooking or baking.

When cooking with natural unprocessed cheese, melt at low temperatures to keep the cheese from turning tough and stringy.

When adding cheese to a soup or sauce, stir in the cheese at the end of cooking to avoid over-heating. Shredding the cheese allows it to melt faster with a minimum of heating.

This will be a new one for my family. I took out bell peppers, put all of cron bread on the bottom. Still tasted great. Had enough for lunch leftover for the next day.

Tried this last night. Was so easy and simple. I did remove the bell pepper, due to allergies. I also put all of the cron bread mix on the bottom. Tuned out Great! This will be on our family menu!

I made my own cornbread mix for this. The only thing I will make sure to do next time if to put more batter on the bottom as my top didn't quite cook in the middle. Great way of stretching a pound of hotdogs, warms up great.

I actually doubled this recipe also to fit in a 13x9 pan. Used 3 boxes of corn muffin mix. Turned out delicious but took a lot longer than 20 minutes to prep.

I made some changes to this recipe. I used an entire onion, three cans of chili, two boxes of corn muffin mix (next time I'll probably use three or four), and a pound and a half of hotdogs. I ended up making one large casserole that my family ate tonight and will have for leftovers, and then a smaller casserole that I'm going to try freezing. It was a totally simple dish and I'm going to write it down in my recipe book so that my family can eat it for years to come.

This is one of my favs, and I make alot of casseroles! I substituted with turkey hot dogs and chili and used 1 1/2 boxes cornbread mix. I deleted the celery, used minced garlic and butter with the oil, and added cayenne, serrano, and jalapeno peppers to the muffin mix. Sweet and spicy! Yummy

Only 3 out of 7 said yes. I'll try it again in about a month. We like sweets & all being tall & thin are not afraid of calories but I think next time I'll nix the brown sugar & probably add some corn. Maybe because all I had was the dark brown sugar. We'll see next time.

YUM YUM YUM!!! It's REALLY tricky to find stuff EVERYONE will eat. This is one of the few and far between. There are lots of ways to lighten it up if you want...I'm not one to pick apart recipes though. Just throwing the thought out there for the people who want to complain about calories. :) Very easy and even better with a little jalapeno...mmm

This was an easy delicious recipe, I used turkey sausage, added jalepeno peppers to the cornbread and added a little taco and chili mix.

with SOOOO many calories, I would make a few suggestions: we love the fat free vegetarian chili. You cannot tell the difference! I would probably use a higher grade sausage if I wasn't catering to kids, otherwise fat free beef hot dogs work just fine.

I made this for my husband, 2 kids, and I. I omitted the celery. I liked the corn bread crust with the cheese, it was very crisy and tasty, but no one else cared for it. The filling wasn't as good as I thought it would be. It was very simple to make, but I won't be making this again.

I thought it turned out really well. I didn't use the green pepper and it was still really good. My husband Loved it and my 3 year old loved that it had hot dog's in it so was happy to try it, and even ate a little bit.

Made this recipe and as I was taking it out of the oven dropped the whole casserole dish on the ground:(...All I can rate is that it SMELLED amazing, I am definately going to try it again, But I will use 2 boxes of cornbread I am sure of that. Will rate it again once I actually TRY IT! :)

I left out the hot dogs, added corn and extra beans for protein. I also added more green pepper, celery and one jalapeno pepper. It was AWESOME! A deep dish pie plate worked perfectly.

We loved this..it was easy to make and was wonderful! My husband asked for the leftovers the next day at lunchtime. I think it would be good too if I used Smoked Sausage or Kielbasa instead of the hot dogs

But I recommend this as a good, quick dinner. I will definitely make it again!

Everyone loved the dish, but we thought of a few changes that would make it better. The Cornbread made the casserole a little too sweet, along with the canned Chili (which is usually a little on the sweeter side). Instead of cornbread, the next time we will make this, we will be trying refridgerated crescent rolls on top to substitute for the cornbread. Not sure if we will be putting anything on the bottom yet, but the 10 year old suggests we do the crescent rolls on top for sure! Definitely make this recipe again and again, is sure to be a family favorite!

I absolutely loved this dish. This will DEFINITELY make it into my regular meal rotation. I used soy dogs and vegetarian baked beans instead of chili to make it a meatless entree. It was SO good that my boyfriend and I polished off the whole pan in one sitting! Whoops!!! I can't wait to make it again - and I am going to recommend it to everyone!

this is an ok recipe, but next time I would omit or reduce the brown sugar. I doubled the recipe for 4 adults except for the hot dogs, as I felt an 8 inch casserole was not enough. I served it with cole slaw.

My son and I both loved this recipe. I had made something similar with chili and cornbread, but could not find the recipe. What better way to easily put the 2 together. You don't even have to add the hot dogs.

This recipe sounds amazing with 1 slight problem. I couldn't get anyone to touch it with the corn bread so I was wondering if I could use equal amounts of Bisquick? I was also a bit curious if the bottom actually gets cooked liked this or would it be good to blind bake it for a short bit 1st? Thnx so much!

I also added corn. Yum! For most Tex-Mex fans, this is NOT hot or even close. If you want a kick, double or triple the chili powder. This is really calorically dense meal, but it is awesome comfort food!

 I loved that this dish was simple! And I loved the concept! But my children didn't like it (maybe because of the spice) and I even used the chili without beans as someone else suggested. I thought it was good, my husband loved it. I'm going to try it again and make a few changes and see if I can get the kids to eat it.

This was delicious! I used chili without beans because no one in my house (besides myself) likes beans and it was still very good. It was moist and had great texture. Make sure you don't over cook the veggies in the first step or they'll turn to much.
