Chili Cheese Corn Bread Recipe

Ingredients

  • 2 tablespoons yellow cornmeal
  • 1 cup yellow cornmeal
  • 2 teaspoons baking powder
  • 1/2 teaspoons baking soda
  • 1/2 teaspoons salt
  • 1/4 cup whole wheat flour
  • 1-1/4 cup low fat buttermilk
  • 1 egg, lightly beaten
  • 1 egg white, lightly beaten
  • 1/4 cup shredded cheddar cheese
  • 2 ounces green chile peppers, diced
  • Cooking spray

Directions

  • Preheat oven to 450°F.
  • Lightly coat 8-inch square baking dish with cooking spray.
  • Coat dish with 2 tablespoons cornmeal.
  • In small mixing bowl, combine remaining cornmeal, baking powder, baking soda, salt, and flour.
  • In separate bowl, combine buttermilk, eggs, cheese, and chile. Add to cornmeal / flour mixture.
  • Spoon mixture into baking dish.
  • Reduce oven temperature to 400°F. Bake 10 minutes, or until center retains no moisture when tested with toothpick.
