Chicken and Mushroom Pizza Recipe

Ingredients

  • 6 ounces boneless skinless chicken breasts, cut into 1-inch cubes
  • Cooking spray
  • 1 Italian bread shell, 12-inch
  • 6 ounces shredded mozzarella cheese
  • 1 small onion, thinly sliced
  • 1/2 cup fresh mushroom slices
  • 1/2 teaspoons ground oregano
  • 2 plum tomatoes, thinly sliced
  • 1-1/2 tablespoons fresh basil
  • pinch hot red pepper flakes, optional

Directions

  • Coat skillet with cooking spray. Place chicken in skillet and cook over medium high for 2 minutes.
  • With slotted spoon, transfer chicken to paper towels. Allow to drain.
  • Preheat the oven to 450°F. Place bread shell on baking sheet and coat gently with the cooking spray.
  • Sprinkle half of cheese on top of bread shell.
  • Place chicken, onion, and mushrooms over cheese and sprinkle with oregano. Place tomato slices on top.
  • Sprinkle with basil. Gently spray top with cooking spray. Sprinkle remaining cheese on top.
  • Bake approximately 15 to 18 minutes. Sprinkle with red pepper flakes, to taste.
