Originally my father-in-law's invention, this home-style oven entree is one we never tire of. I've made a few improvisations with seasonings to suit the next generation's tastes.

Diabetic Friendly
Nutritional Analysis: One serving (prepared without salt) equals 281 calories, 70 mg sodium, 73 mg cholesterol, 18 gm carbohydrate, 29 gm protein, 10 gm fat. Diabetic Exchanges: 3 lean meat, 1 starch, 1/2 vegetable.

We really liked this recipe. It was delicious, and not too overwhelming. This is coming from a girl who is not a big fan of onion or garlic either.

My son loved this recipe. My husband thought was a bit bland. I will add some more garlic and maybe some italian dressing or something to give it some more flavor next time.

I did soooooo much fixing up to this recipe and it was not worth it. My husband called it ugly bland chicken and potatoes!
