Chicken Wild Rice Chowder Recipe

Ingredients

  • 2 cups sliced fresh carrots
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 2 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cans (14-1/2 ounces each) chicken broth
  • 2-2/3 cups cubed cooked chicken breasts
  • 1 package (8.8 ounces) ready-to-serve long grain and wild rice
  • 1/4 cup half-and-half cream
  • 1/8 teaspoon pepper

Directions

  • In a large saucepan, saute the carrots, onion and celery in butter until tender. Stir in flour until blended; gradually add broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the chicken, rice, cream and pepper; heat through. Yield: 4 servings.

i made this with olive oil (a healthy fat) instead of butter and fat-free half and half for a healther version. I used Uncle Bens Whole grain medley (ready rice... zap in the microwave for 90 seconds) Its a great cooler weather soup and figure friendly too!

I couldn't find Ready to Serve rice so I had to precook my rice that took away from the simplicity of the recipe but it was worth it. I think I would like a bit more seasoning to taste in mine next time (my 13 year old who loves to cook said he thought it needed a bit of something more in seasoning) I also needed more liquid in mine as by the time the second and third person dished up it was pretty much just rice and no chowder. Will make it again though for sure.

this is the ultimate comfort food, I also added the same amount of white pepper makes it just a littlezipper.

My family loves this recipe. I have to double it so we have left overs for lunch. This is very easy to make and very good on a cold day (we make it in the summer too, we love it so much!).
