Chicken Waldorf Salad Recipe

Ingredients

  • 2 tablespoons orange juice
  • 1 lb boneless skinless chicken breasts
  • Pinch salt and pepper
  • 3/4 cup cold water
  • 1 small green apple
  • 3/4 chopped celery
  • 16 ounces plain whole milk yogurt
  • 1/3 cup chopped walnuts
  • 4 cups shredded romaine lettuce

Directions

  • In medium skillet, bring water to a boil. Season chicken lightly with salt and pepper, and then add to boiling water.
  • Cover, reduce heat and simmer chicken for 8 minutes or until fully cooked. Drain and let cool.
  • When chicken is cool enough to handle, cube chicken and place in large bowl.
  • Core apple and dice into small pieces; add to chicken.
  • Add celery, yogurt, orange juice, and walnuts. Toss well.
  • Divide lettuce onto four serving plates. Divide and place chicken waldorf salad onto each plate. Serve.
