Ingredients

  • 1 medium onion, chopped
  • 1 celery rib, chopped
  • 1 garlic clove, minced
  • 2 teaspoons vegetable oil
  • 1-1/2 cups chicken broth
  • 1 cup diced fresh tomatoes
  • 1 cup cubed cooked chicken
  • 1/4 teaspoon dried marjoram
  • 1/4 teaspoon dried thyme
  • 1/8 teaspoon pepper
  • 1 bay leaf

Directions

  • In a saucepan, saute the onion, celery and garlic in oil until tender. Stir in the broth, tomatoes, chicken, marjoram, thyme, pepper and bay leaf. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until heated through. Discard bay leaf. Yield: 2 servings.

Nutrition Facts: 1 serving (1 each) equals 240 calories, 10 g fat (2 g saturated fat), 62 mg cholesterol, 786 mg sodium, 13 g carbohydrate, 3 g fiber, 24 g protein.
