Chicken Swiss Bundles Recipe

Ingredients

  • 1 small onion, finely chopped
  • 1/2 cup sliced fresh mushrooms
  • 1-1/2 teaspoons butter
  • 1 garlic clove, minced
  • 1 cup cubed cooked chicken breast
  • 1/2 cup chopped roasted sweet red peppers
  • 1 tablespoon honey mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon lemon-pepper seasoning
  • 1/4 teaspoon Italian seasoning
  • 2 cups (8 ounces) shredded Swiss cheese
  • 12 frozen bread dough dinner rolls, thawed
  • 2 tablespoons butter, melted

Directions

  • In a large skillet, saute onion and mushrooms in butter until tender. Add garlic; cook 1 minute longer. Add the chicken, peppers, mustard and seasonings; heat through. Remove from the heat; stir in cheese.
  • Flatten each roll into a 5-in. circle. Place 1/4 cup chicken mixture in the center of six circles. Brush edges with water; top with remaining circles. Press edges with a fork to seal.
  • Place on greased baking sheets; brush with butter. Bake at 350° for 18-22 minutes or until golden brown. Cut bundles in half to serve. Yield: 12 servings.

Nutritional Facts 1/2 chicken bundle equals 214 calories, 9 g fat (5 g saturated fat), 32 mg cholesterol, 375 mg sodium, 21 g carbohydrate, 1 g fiber, 12 g protein. Diabetic Exchanges: 2 lean meat, 1 starch, 1 fat.

One-half of a bundle is just not enough for 1 serving - definitely had to eat a whole one! Delicious and my family loved them!

I used dinner rolls...worked well. I also used moz rather than swiss. I did not have any mushrooms so doubled the pepper used 1 red 1 yellow. Not too bad a bit plain but good.

My family enjoyed these chicken bundles. I used mozzarella cheese instead of swiss. If I make them again, I will definitely omit the mustard. I agree with another reviewer about the dough being a little difficult to work with. Otherwise, these bundles made a very tasty dinner. My advice would be to omit the flavors you know you do not like and make substitutions that are good for you. There are many possibilities with this recipe.

Loved this! Great way to use a leftover cooked chicken breast. I actually omitted the red peppers and used mozzarella instead of swiss and dijon mustard instead of the honey mustard. We used refrigerated Grands biscuits instead of the frozen rolls too just because I didn't have time to thaw frozen rolls. The hubby really loved it! Yummy blend of flavors and pretty quick to make!

Not sure if I would make this one again. The flavors are good but we found it to be very bready. Might taste better with crescent rolls.

This recipe was a real hit. It was a little difficult to work with the dough, but the flavors worked well together

We loved this! I was out of the lemon-pepper, but added extra italian, normal pepper, and extra honey mustard and it was delicious! I even made it again, froze the filling, and thawed it on a day along with the rolls and made an easy dinner with soup and it was tasty!
