Chicken Ranch Salad Recipe

Ingredients

  • 1/2 cup sliced cucumber
  • 1/2 cup sliced carrots
  • 1/2 cup fresh chopped celery
  • 1-1/2 cups diced cooked chicken breast
  • Pinch chopped parsley
  • 4 cups chopped romaine lettuce
  • 1 teaspoon chopped parsley, optional
  • 3 piece reduced sodium bacon slices, cooked and crumbled, optional
  • 1/2 cup thinly sliced red onion, optional
  • 1/4 cup whole grain croutons, optional
  • 1 medium garlic cloves
  • 3/4 cup low fat buttermilk
  • 2 tablespoons mayonnaise
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoons kosher salt
  • 1/2 teaspoons black pepper
  • 1/8 teaspoons dried thyme

Directions

  • In food processor or blender, combine garlic, buttermilk, mayonnaise, lime juice, salt, pepper, and thyme in a blender. Blend on high for one minute.
  • Combine chicken, cucumber, carrots, and celery. Pour dressing over the chicken mixture. Refrigerate for at least 2 hours.
  • To serve, arrange 1 cup of lettuce on each of 4 serving plates, and top each with an equal amount of the chicken salad.
  • Top with croutons, bacon, red onion slices, and fresh parsley, if desired.

Nutritional Facts 1 serving equals 174 calories, 8 g fat (2 g saturated fat), 385 mg sodium, 7 g carbohydrate, 17 g protein. Diabetic Exchanges: 2 lean meat, 1-1/4 fat, 3/4 vegetable, 1/4 meat, 1/4 milk.
