For this effortless entree, I sandwiches cooked chicken, tomato, onion and cheese inside tortillas, then warms them on a griddle until the cheese is gooey. I garnish them with sour cream, your favorite salsa and refried beans.Sacha K. Roach, Warsaw, Ohio

Keep Guacamole FreshI like to make guacamole ahead of time for my favorite chicken quesadillas. I’ve found that if the avocado pit is added to the guacamole and the dish is covered, the guacamole retains its pretty, green color. —Pam Ubl, Coon Rapids, Minnesota

Super quick & easy. My family really enjoys these, but I have to leave the onion & tomato off for them. I like to use salsa instead plus a smidge of taco seasoning.
