Chicken Cacciatore Recipe

Ingredients

  • 1 tablespoon butter
  • 1/2 lb boneless skinless chicken breasts
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1 garlic clove, minced
  • 26 ounces canned unsalted diced tomatoes
  • 1 cup fresh mushroom slices
  • 1/2 cup chopped parsley
  • 1 small green bell peppers, chopped
  • 1 teaspoon dried basil
  • 1 teaspoon ground oregano
  • 1/4 teaspoons salt, optional
  • 1/4 teaspoons black pepper
  • 1/8 teaspoons ground cayenne (red pepper)

Directions

  • In large skillet, melt butter over low heat. Add chicken breasts, cook until lightly browned.
  • Remove chicken from skillet. Chop. Set aside.
  • Add onion, celery, and garlic to warm skillet. Saute vegetables until tender.
  • Return the chicken to skillet. Add undrained tomatoes, mushrooms, parsley, green peppers, basil, oregano, salt, pepper, and cayenne pepper.
  • Cover and simmer for 20 minutes. Serve.
