Chicken Broth Recipe
  • Prep: 20 min. Cook: 2 hours
  • Yield: 6 Servings

Ingredients

  • 1 whole chicken
  • 4 garlic cloves
  • 2 celery stalks, with tops, coarsely chopped
  • 6 parsley sprigs
  • 1 bay leaf
  • 1/4 teaspoons black peppercorns
  • 2 medium onions, quartered
  • 1 medium carrot, sliced
  • 1 cup sliced parsnip
  • 8 cups cold water

Directions

  • In a large stock pot, combine all ingredients and bring to boil.
  • Reduce heat to low and simmer 15 minutes. Skim froth from top.
  • Cover and simmer 2 hours.
  • Remove meat to large bowl.
  • Strain broth over large bowl. Discard all solids.
  • Store, covered, in refrigerator up to 3 days or freeze.
