Chicken Breasts with Melon Relish Recipe

Ingredients

  • 1/4 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon pepper
  • 4 boneless skinless chicken breast halves (6 ounces each)
  • 1 tablespoon canola oil
  • RELISH:
  • 1 cup diced cantaloupe
  • 1/4 cup finely chopped celery
  • 1 green onion, chopped
  • 2 tablespoons minced fresh mint
  • 1 tablespoon chopped crystallized ginger
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1/2 teaspoon grated lime peel

Directions

  • In a small bowl, combine the salt, ginger, nutmeg and pepper. Rub over both sides of chicken. In a large skillet, cook chicken in oil over medium heat for 8-10 minutes on each side or until a meat thermometer reads 170°. Meanwhile, in a small bowl, combine the relish ingredients. Serve with chicken. Yield: 4 servings.
