Chicken & Brie Salad Recipe

Ingredients

  • 1 package (10 ounces) hearts of romaine salad mix
  • 3 cups cubed rotisserie chicken
  • 2 cups honey-roasted cashews
  • 2 cups seedless red grapes
  • 4 ounces Brie cheese, cubed
  • 1 cup red wine vinaigrette

Directions

  • In a large bowl, combine the first five ingredients. Drizzle with vinaigrette and toss to coat. Yield: 7 servings.

Brie

A soft cows’ milk cheese, named after the French region of Brie, that is pale in color with a grayish-white edible rind. The interior has a soft spreadable consistency when served at room temperature. Perfect for use on cheese trays or melted in sandwiches, soups or fondues.

Very good salad. I used plain cashews to decrease the sweetness.
