Chewy Granola Bars Recipe

Ingredients

  • 1/2 cup butter, softened
  • 1 cup packed brown sugar
  • 1/4 cup sugar
  • 2 tablespoons honey
  • 1/2 teaspoon vanilla extract
  • 1 egg
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1-1/2 cups quick-cooking oats
  • 1-1/4 cups crisp rice cereal
  • 1 cup chopped nuts
  • 1 cup raisins or semisweet chocolate chips, optional

Directions

  • In a large bowl, cream butter and sugars until light and fluffy. Add the honey, vanilla and egg; mix well. Combine the flour, cinnamon, baking powder and salt; gradually add to creamed mixture. Stir in oats, cereal and nuts and raisins or chocolate chips if desired.
  • Press into a greased 13-in. x 9-in. baking pan. Bake at 350° for 25-30 minutes or until the top is lightly browned. Cool on a wire rack. Cut into bars. Yield: 2 dozen.

Nutritional Facts 1 bar equals 160 calories, 7 g fat (3 g saturated fat), 19 mg cholesterol, 91 mg sodium, 22 g carbohydrate, 1 g fiber, 3 g protein. Diabetic Exchanges: 1-1/2 starch, 1-1/2 fat.

This is a lot of sugar and carbs to be considered a good diabetic choice! I used 1/2 c brown sugar and 1/2 c Splenda and it probably could be reduced more and still taste sweet enough, especially with the additions of raisins or prunes. I added 1/4 c ground flax for additional fiber. These are super good, don't overbake or they get crumbly. 18 min with light browning on top gives perfect chewy-crispy balance.

The best granola bar recipe I have found. My 15 year old teen and his friends think it is great. I use 2/3 c. each of dried cranberries, walnuts or pecans, and mini chocolate chips. Can adapt according to anyone's taste.

You can throw absolutely anything in these bars and they are delicious. I omitted the 1/4 sugar and added flax meal and wheat germ for nutrition. I also did 1/2 c white flour and 1/2 wheat flour. I had cinnamon chips on hand, which were delicious! I made one batch gluten-free with chocolate chips and they were equally as good as the other batch with cinnamon chips.

This recipe is fantastic! You can literally put anything in these. I added wheat germ and cinnamon chips to mine and they were a huge hit!!! I didn't add any fruit to this batch, but raisins/cranberries/apples would be great in these. I also made a separate gluten-free batch that were just as good!

Everyone in my family loves these! I've made them at least 20 times, and each time I've made them a little different - I throw in whatever kind of spices, chips, dried fruit, nuts, and cereal I have on hand that sounds good together. I've also added a generous spoonful of peanut or almond butter, and then added a bit more oats to keep the dough the right consistency. They turn out delicious every time! Thanks for sharing the recipe.

I liked these a lot, and so did my son. I omitted the nuts without any ill effects. I got outvoted on the optional ingredients (my son wanted raisins), but I think I will put my foot down next time, as I think chocolate chips will be ever so much better. A fine alternative to store-bought.

I followed this recipe pretty closely and we really like how these bars turned out. My husband doesn't like big pieces of nuts in food but I think they're vital to the flavor and texture, so I always grind nuts in my food processor until they are fine but not pasty. I store them in glass jars and pull them out whenever a recipe calls for them. The other change I made was that I used 1/2 cup dried cranberries and 1/2 cup semisweet chocolate chips and they were delicious with a pleasantly moist chewiness.

Everyone loved this recipe, but I think it could be reworked to be more healthy . . . less sugar and butter. The dough seemed more like a sweet cookie dough.

I remade this in a lower sugar version, using splenda, splenda brown sugar blend & hersheys sugar free chocolate chips. Awesome granola bar, loaded with fiber & now lower sugar. This is the best treat I've tried in awhile, BIG Hit.

These were excellent the way they are. As a parent of picky eaters, I added 1/2 cup of dry milk and 1/4 cup of wheat germ. The second time I tried them, I omitted the cinnamon, cut the butter to a 1/4 cup and added 1/4 cup of peanut butter. Everyone liked both versions!

After reading the posts before making this I worried about the time I baked it- I shouldnt have. These turned out really good- far better than those cardboard granola bars you get at the grocery. My husband loved all the different flavors and he said the hint of cinnamon really made it delicious! I didnt have quick cooking oats- I used regular oasts and they turned out fine. (better than fine really!) So good.

bakebakekuchen: I appreciate your concern regarding this recipe being diabetic friendly. Between the brown sugar, granulated sugar and honey there's less than 1 tablespoon added sugar per serving. Each diabetic needs to consider whether 1-1/2 starch exchanges and 1-1/2 fat exchanges spent on a granola bar will fit into their personal diet plan. As far as sweets goes - this includes whole grains, fruit (if made with raisins) and less than 1 tablespoon added sugar per serving making it a snack that is fair to consider.

I omitted the white sugar and increased the honey to 3 Tbls (raw unprocessed)

I used honey nut cherrios instead of rice krispies (what I had on hand) and used 1/2 cup each chopped walnuts, dark chocolate chips and golden raisins.

My daughter and family loved them and asked me for the recipe :)

They are chewy, delicious, and addicting!

I don't know how Taste of Home can call this recipe "Diabetic Friendly" with the amount of sugar called for. No diabetic should be eating anything with this much carbs and sugar!

I gave this recipe 3 stars because of texture and cook time. taste is for sure 5 stars. but even after 35 minutes of cooking, it was still smooshie like a raw cookie. I followed the recipe exactly except for instead of 1 cup raisins or choc chips i did 1/2 cup of both. so every thing was the same as far as measurements is concerned.. I am letting it rest in the pan hoping that it hardens because the piece i ate was delish even though pretty raw

I will make this recipe again but will try a few alterations. I found these slightly dry and crumbly so I will lower the cereal a bit and add an extra tablespoon of honey or agava to help with moisture and to help it come together more.

These are good, though I don't know how I feel about calling them a granola bar... butter, sugar, flour, egg... more of a glorified cookie bar. Still probably healthier than most store-bought granola bars. I used Cheerios instead of crispy rice and omitted the white sugar and they are still plenty sweet. Next time I will probably replace the honey with coconut oil or maybe peanut butter. I also used wheat flour to boost nutrition. I do like how adaptable this recipe can be, you can easily make a completely different flavor combo each time.

this recipe is phenomenal! I love that it can be customized to anyones tastes/dietary restrictions. I used cheerios in place of crisped rice cereal for a bit more crunch, and even though I made a double batch, they disappeared almost instantly! Next time I will add coconut, or replace the chocolate chips with dried cranberries

These bars are fun! They were chewy with a little crunch from the rice crispy cereal. I put in coconut instead of chocolate chips, and I'll try some other variations as well in the future.

Very good! I like the possibilities. I dried apples, chopped them pretty small, used half unsweetened applesauce for half the butter.I also used honey roasted soy nuts for nuts and didn't have honey so used maple syrup. Next I want to try peanut butter and thought of seeing if a chocolate protein powder would work in something like this.Also, I think a tropical one would be good with dried pineapple, coconut with maybe citrus flavors mixed in.

I just made these bars today. They are very good. I used maple syrup (from our trees) instead of honey. I also added coconut, sesame seeds and sunflower seeds- 1/2 cup each.

Very good bars! I doubled the recipe and used maple syrup (from our trees) instead of honey. I also put in 1/2 cup coconut, 1/2 cup sesame seeds and 1/2 cup sunflower seeds. My husband likes them for when he is in the field (farmer).

These were great. Quick to whip together and a good, easy kid helper recipe. I like granola bars to be full of 'stuff' so I added white chocolate chips and craisins. We'll also try coconut, apricots, dates, cherries and golden raisins.

My kids are in a lot of basketball and softball tournaments so we are leaving the house early in the morning this is a great breakfast for them to eat in the car on the way. My kids love them. usually I have to bring the whole pan because my daughter passes them around to her friends.
