Chewy Energy Bars Recipe
  • Prep: 20 min. + cooling
  • Yield: 18 Servings

Ingredients

  • 2-1/2 cups crisp rice cereal
  • 2 cups old-fashioned oats
  • 1/4 cup toasted wheat germ
  • 1 cup corn syrup
  • 1 cup peanut butter
  • 1/2 cup packed brown sugar
  • 1 teaspoon vanilla extract

Directions

  • In a large bowl, combine the cereal, oats and wheat germ. In a small saucepan, combine the corn syrup, peanut butter and brown sugar. Cook over medium heat until peanut butter is melted, stirring occasionally. Remove from the heat. Stir in vanilla. Pour over cereal mixture; mix well.
  • Transfer to a greased 9-in. square pan. Gently press cereal mixture evenly into pan. Cool completely. Cut into bars. Yield: 1-1/2 dozen.

Nutritional Facts 1 bar equals 212 calories, 8 g fat (2 g saturated fat), 0 cholesterol, 115 mg sodium, 33 g carbohydrate, 2 g fiber, 6 g protein.

As is the recipe is so unhealthy. I used organic brown crisp rice cereal, 1/2 cup maple syrup instead of the unhealthy corn syrop, natural nut butter, and some carob chips. We need to stop using corn syrup!

This recipe cut into 32 bars is more usable by diabetics and children and non-athletic

type people. Cutting into 16 bars, can't see how anyone would get 18 bars out of a 9x9 panful, is just too many carbs and calories. Cut into 32 bars and adding a

4 oz serving of yogurt or small fresh fruit is showing healthy wisdom in your choices.

Good! The only things I did different was reduce the brown sugar (1/4 cup) & used agave nectar instead of corn syrup. Next time I might try honey instead of the nectar just to switch it up. Also used an all natural no sugar added peanut butter.

I was looking for a more healthy snack for my kids when I found this. Not only is it simple & fast to prepare but is YUMMY! Huge hit with my kiddos. We put ours in the fridge for a "cold' treat and they can't get enough! We will be making this again very soon!

Just made these for the 2nd time. Wanted to say that I substituted 1/2 the corn syrup with honey and cut the brown sugar to 1/3 cup. I added sunflower seeds, craisins, pumpkin seeds, and chocolate chips. These are very good! And still alot better for you than the store bought ones full of preservatives.

These are delicious and easy BUT they are so unhealthy! We need to alter the amount of brown sugar and corn syrup. They are dessert not a healthy snack.

Very good and fast. I will be making them with 1/2 cup corn syrup and 1/2 cup honey this week. Will also add some fruit (cranberries, apples, raisins, etc....). Whole family loved them!

We loved these bars!! I added raisins and, after the syrup mixture was slightly cooled, mini chocolate chips. The next time i will decrease the amount of brown sugar as they are plenty sweet.

Corn Syrup is TERRIBLE for you! These are fake energy bars. They will cause a sugar spike and then your energy will crash!!

I tried these today and they are very good. However I had to add twice the amount of crisp rice cereal to get the right consistency, otherwise they were very soupy. I added 3/4 cup miniature chocolate chips but unfortunately I didn't wait for them to cool long enough so they melted. They were very good anyway and I will definitely make them again.

I did not have wheat grem, so substituted a bran flake cereal, added some roasted nuts and a bit of dried fruit- very versitle, and would make a great school or picnic snack

Haven't tried yet, but looks like the way I make my PB-rice-Krispie bars -- instead of corn syrup, I will use Agave syrup (thinner, natural and VERY sweet) and I tend to use natural peanut butter instead of the hydrogenated regular PB you find at the market. Can't wait to try! :)

These are great and I also added Mini chocolate chips after cooled a little and it was even better..... It made it tast like no bake cookies. Yummy! Thanks for the recipe.... :)

I have not made these yet, but wondered if anyone has tried to make these without the corn syrup. We are trying to avoid the stuff and wondered how it would turn out without it. Any ideas?

Loved the convenience of fast prep. Very chewy indeed. Work fast when pouring mixture over dry ingredients. Just like rice krispie squares,and we all have made them before!

This is a great recipe. It's as easy as rice krispie treats. Next time I might add chopped nuts or drizzle with chocolate for a no-bake cookie flavor.

I made these bars and added a small package of slivered almonds and a dash of cinnamon. Next time I'm going to try dried cranberries! They are a perfect addition to a packed lunch!

A super yummy snack! I was planning on making Rice Krispies treats with my kids but the magazine arrived in the mailbox just in time! =) I doubled the batch and made thicker bars. The hardest part was stirring it all together. YUMMY!
