A favorite meal for our family consists of this coleslaw served with traditional Maryland crab cakes and corn on the cob. It's especially good on a warm summer day. This slaw is delicious with other meals, too.

Chesapeake Slaw Recipe
  • Prep: 10 min. + chilling
  • Yield: 4-6 Servings

Ingredients

  • 3 cups shredded cabbage
  • 2 cups shredded carrots
  • 1/3 to 1/2 cup olive oil
  • 2 tablespoons vinegar
  • 1-1/2 teaspoons seafood seasoning
  • 1/4 teaspoon salt
  • Dash pepper

Directions

  • In a bowl, combine cabbage and carrots. In a small bowl, combine oil, vinegar, seafood seasoning, salt and pepper. Pour over cabbage mixture and toss to coat. Cover and refrigerate for at least 1 hour. Yield: 4-6 servings.

Nutritional Facts 1 serving (1 cup) equals 130 calories, 12 g fat (2 g saturated fat), 0 cholesterol, 283 mg sodium, 6 g carbohydrate, 2 g fiber, 1 g protein.

I didn't have seafood seasoning so used a mixture of pepper, onion powder, paprika, garlic powder and basil.

I have made this slaw several times as an alternative to the traditional mayo-based kind. I get lots of comments each time I fix it -- everyone seems to like it a lot. I know I do!
