Years ago, I saved this festive recipe and made it only at Christmastime. But my grandkids loved the sweet combination of peanut butter, chocolate and cherries so much that now I mix up a batch anytime they ask or visit!

Using maraschio cherries WITHOUT the stems, I made the peanut butter balls the size of a large walnut (40 balls). I refrigerated overnight and the next morning, I used my candy dipper to dip the balls in the melted chocolate chips and shortening. After dipping, I had about 1/3 cup of chocolate remaining. I will make this recipe again as everyone enjoyed them. NOTE: These are VERY rich!

These were very easy to make...came off without a hitch. They also look very pretty on a plate. I only made a couple of alterations. I only had chunkey peanut butter so I used that. And I used Hersey's special dark chocolate chips instead of the semi-sweet. Very good.
