Cherry Dream Cake Recipe
  • Prep: 15 min. + chilling Bake: 30 min. + cooling

Ingredients

  • 1 package white cake mix (regular size)
  • 1 package (3 ounces) cherry gelatin
  • 1-1/2 cups boiling water
  • 1 package (8 ounces) cream cheese, softened
  • 2 cups whipped topping
  • 1 can (21 ounces) cherry pie filling

Directions

  • Prepare cake mix according to package directions, using a greased 13-in. x 9-in. baking pan. Bake at 350° for 30-35 minutes or until a toothpick comes out clean.
  • Dissolve gelatin in boiling water. Cool cake on a wire rack for 3-5 minutes. Poke holes in cake with a meat fork or wooden skewer; gradually pour gelatin over cake. cool for 15 minutes. Cover and refrigerate for 30 minutes.
  • In a large bowl, beat cream cheese until fluffy. Fold in whipped topping. Carefully spread over cake. Top with the pie filling. Cover and refrigerate for at least 2 hours before serving. Yield: 20 servings.

Nutritional Analysis: One serving (prepared with sugar-free gelatin, fat-free cream cheese, reduced-fat whipped topping and light cherry pie filling) equals 164 calories, 4 g fat (1 g saturated fat), 1 mg cholesterol, 251 mg sodium, 28 g carbohydrate, trace fiber, 3 g protein. Diabetic Exchanges: 1-1/2 starch, 1 fat, 1/2 fruit.

I remember making this cake as written many years ago and that it was very good. Yesterday I made it again to serve today, this time with a lemon cake mix, lemon jell-o mix, and raspberry pie filling. OH MY! It was extremely good! I even made the cake the low fat way with applesauce and egg whites. Because I used lemon jell-o, you really couldn't tell it was a poke cake, but it was extremely moist. Everyone raved over it!

Since I didn't have the cherry pie filling I did mandarin oranges as well - very pretty. I also added 2/3 cup of powdered sugar to the cream cheese mixture to make it taste better - more like the fillings in desserts. My father is not a big dessert person and he came by the next day just so he could have a second piece! My husband had the left overs in his lunch and they lasted just fine.

I made this using orange jello and mandarin oranges on top and called it a dream-cicle cake. Oh so refreshing and wonderful!!!

I made this cake using strawberry gelatin and strawberries. When it was available, I used the strawberry flavored CoolWhip. Terrific with either flavor.
