This is hands-down my most-requested cookie recipe at holiday gatherings. These cookies are reminiscent of chocolate-covered cherries, so they are a decadent treat. —Noelle Myers, Grand Forks, North Dakota

Ingredients

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 large egg, room temperature
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup chopped dried cherries
  • 1/2 cup cherry preserves
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup white baking chips

Directions

  1. Pre-heat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg and vanilla. In another bowl, whisk flour, baking powder and salt. Gradually add to creamed mixture. Stir in dried cherries. Drop dough by tablespoonfuls 2 in. apart onto ungreased baking sheets.
  2. Bake until edges are light golden brown, 10-12 minutes. Using the back of a teaspoon, press a small indentation in tops of warm cookies. Remove from pans to wire racks to cool completely.
  3. Meanwhile, place preserves in a microwave-safe bowl. Microwave on high until warm, 30-45 seconds. Using an immersion blender or small food processor, blend cherry preserves until cherries are finely chopped. Stir in chocolate chips until melted, returning to microwave to melt chips if necessary. Stir until blended. Spoon cherry mixture into center of each cookie. Melt white baking chips; drizzle over cookies. Refrigerate until chocolate is set, about 15 minutes (filling will stay slightly soft).
