Cheesy Vegetable Frittata

Ingredients
- 4 eggs, beaten
- 1 cup sliced fresh mushrooms
- 1/2 cup chopped fresh broccoli
- 1/4 cup shredded sharp cheddar cheese
- 2 tablespoons finely chopped onion
- 2 tablespoons finely chopped green pepper
- 2 tablespoons grated Parmesan cheese
- 1/8 teaspoon salt
- Dash pepper
Directions
- In a large bowl, combine all ingredients. Pour into a shallow 2-cup
- baking dish coated with cooking spray.
- Bake, uncovered, at 350° for 20-25 minutes or until a knife
- inserted near the center comes out clean. Serve immediately. Yield:
- 2 servings.
