Nothing is better then a casserole so I always bring them to church suppers and potlucks. This is the one I bring when I am asked to bring a side. It is so cheesy and delicious.—Mae Taylor, Indianapolis, Indiana

Ingredients

  • 9 medium potatoes (about 3 pounds)
  • 1 package (16 ounces) process cheese (Velveeta), cubed
  • 1 cup chopped onion
  • 2 cups mayonnaise
  • 1/2 pound bacon, cooked and crumbled, divided

Directions

  • Cook potatoes in boiling salted water until tender. Drain and cool.
  • Peel and cube potatoes; combine with cheese, onion, mayonnaise and
  • half of the bacon in a large bowl. Spoon into a 13-in. x 9-in.
  • baking dish. Sprinkle with remaining bacon. Bake, uncovered, at
  • 350° for 50 minutes or until the top begins to brown. Yield: 10
  • servings.
