I used ham instead of bacon, but the flavor was still all wrong. All I could taste was mayonnaise. It was like eating hot potato salad.

Making this the second time this week!! Had it w/dinner & great w/eggs for breakfast!! I used 5 lbs. of red potatos & it fit nicely in a 10X13 baking casserole dish, left out the onions (don't care for) & doubled the bacon....AWESOME,AWESOME,AWESOME!!! The first batch didn't last long, so we are doing it all over again tonight-YUM!!

Most definitely will make again...and again. Big hit with my husband. Decided to save time by cubing unpeeled potatoes, then cooking them rather than having to cool potatoes first. Thank you for sharing this delicious dish!!

This recipe has been in my family for years and I have no idea where it actually came from but I LOVE this recipe!!! And you only need to use ONE cup of mayo, two would be too much!! Also, we add sliced green olives to it.

Tried this recipe over the weekend. I was surprised how wonderful this was. So easy and delicious. We used Miracle Whip and it was really good. This one stays in the recipe file that I use all the time now. Give it a try.

I make a version of this that we call "Mrs. Payton's Potatoes". She was a neighbor of mine growing up in IN. Her's didn't have onion in it, but I like it. I'll have to alternate between recipes. Thanks for posting!!
