Cheesy Chicken & Rice Casserole Recipe

Ingredients

  • 1 can (10 3/4 ounces) Campbell's® Condensed Cream of Chicken Soup (Regular, 98% Fat Free or Healthy Request®)
  • 1 1/3 cups water
  • 3/4 cup uncooked regular long-grain white rice
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground black pepper
  • 2 cups frozen mixed vegetables
  • 4 skinless, boneless chicken breast half (about 1 pound)
  • 1/2 cup shredded cheddar cheese

Directions

  • Heat the oven to 375°F. Stir the soup, water, rice, onion powder, black pepper and vegetables in a 2-quart shallow baking dish.
  • Top with the chicken. Cover the baking dish.
  • Bake for 50 minutes or until the chicken is cooked through and the rice is tender. Top with the cheese. Let the casserole stand for 10 minutes. Stir the rice before serving. Yield: 4 servings.

    Serving Suggestion: Serve with a Caesar salad. For dessert serve frozen Italian-style water ice or gelati.

    Alfredo: Substitute broccoli flowerets for the vegetables and substitute 1/4 cup grated Parmesan for the Cheddar cheese. Add 2 tablespoons Parmesan cheese with the soup. Sprinkle the chicken with the remaining Parmesan cheese.

    Lower Fat: Use Campbell's® 98% Fat Free Cream of Chicken Soup instead of regular soup and use low fat cheese instead of regular cheese.

    Mexican: In place of the onion powder and black pepper use 1 teaspoon chili powder. Substitute Mexican cheese blend for the Cheddar.

    Italian: In place of the onion powder and black pepper use 1 teaspoon Italian seasoning, crushed. Substitute 1/3 cup shredded Parmesan for the Cheddar.

We had this last night. It's a good basic recipe that can be tweaked to your individual taste. I will definately be making this again, but since it was just a little bland for our taste I will sprinkle a rub on the chicken before baking and add a dash of poultry seasoning to the rice mixture.

This is one of the easiest dinner recipes I have ever tried and it tasted great. It is a complete meal and the whole family loved it. I doubled the recipe so had to bake it a little longer. I also put some shredded sharp cheddar cheese in with the rice mixture before it baked for added flavor. Will definitely make again as it was a family favorite.

I agree that more salt needs to be added. Additionally, next time I will quickly brown the top of the chicken breasts just for appearance's sake. This recipe is a lifesaver for me, as it took only about 5 min to get ready for the oven. I couldn't believe it! As a homecare nurse who has hours of computer work every evening after a full day seeing patients, I need recipes like this - my husband's repertoire of dinner recipes is extremely limited.

I can't believe cooking supper can be this easy. This was easier than you can imagine. Can literally be assembled in 2 minutes and for the amount of work put in, it tastes fantastic. I've always thought of using cans of soup kind of 'cheating' cuz I like making things from scratch, but for an every now and then easy meal, this was great. And I used low sodium soup, so it was a bit healthier. My 4-year old and my husband both enjoyed it. My husband wouldn't believe how little time I spent on supper tonight!!

This was on the back of the Campbell's Cream of Chicken soup and I was looking for an easy meal to make, this was perfect! I've made it a few times now and added a can of mushrooms. Yummy!
