Ingredients

  • 1 can Campbell's® Condensed Cream of Chicken Soup or 98% Fat Free Cream of Chicken Soup, undiluted
  • 1-1/3 cups water
  • 3/4 cup uncooked long grain rice
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon pepper
  • 4 boneless skinless chicken breast halves
  • 1 cup (4 ounces) shredded cheddar cheese

Directions

  • Combine soup, water, rice, onion powder and pepper in a shallow 2-qt. baking dish. Top with chicken. Sprinkle chicken with additional pepper.
  • Cover. Bake at 375° for 45 minutes or until chicken is no longer pink. Uncover. Sprinkle cheese over chicken.
  • Cheesy Chicken & Vegetable Rice Bake: Stir 2 cups of your favorite fresh, canned or frozen vegetables into soup mixture before topping with chicken. Yield: 4 servings.

I ended up doubling everything in this recipe except for the number of chicken breasts (we used really thick chicken breasts) and it all fit nicely in a 9x13 baking dish.

This is a great all-in-one dish - perfect for a busy week night! It's quick and easy to prepare and I love the fact that I was able to just put it in the oven and go about my other tasks for the evening. If you're looking for an "in your face" kind of dish, this is not it. This dish is low-key, creamy, filling, and delicious - real comfort food!
