Cheese and Onion Potatoes

Ingredients:

  • 1/4 cup butter or margarine
  • 4 medium unpeeled red potatoes, sliced 1/4 inch thick
  • 2 tablespoons dried minced onion
  • Pepper to taste
  • 1/3 cup shredded cheddar cheese
  • Chopped fresh parsley

Directions:

In a skillet, melt butter over medium-high heat. Add potatoes, onion and pepper; toss to coat. Cover and cook, stirring occasionally, until potatoes are tender, about 10 minutes. Uncover; cook until potatoes are browned, about 5-7 minutes. Top with cheese. Cover and remove from the heat; let stand for several minutes. Sprinkle with parsley before serving. Yield: 4 servings.
