Cheese Quesadillas Recipe
  • Prep/Total Time: 15 min.
  • Yield: 4 Servings

Ingredients

  • 4 flour tortillas (8 inches), warmed
  • 1-1/2 cups (6 ounces) shredded Mexican cheese blend
  • 1/2 cup salsa

Directions

  • Place the tortillas on a greased baking sheet. Combine the cheese and salsa; spread over half of each tortilla. Fold over.
  • Broil 4 in. from the heat for 3 minutes on each side or until golden brown. Cut into wedges. Yield: 4 servings.

This was awesome! For one serving, I used 1/3 cup Weight Watchers Mexican cheese, 2 tbsp salsa & added about 1/8 tsp cumin & chili powder. I didn't broil, but cooked it on the stove top till nice & crispy. I also served with more salsa on the side. Delicious!!

Anyone I've ever made these for is crazy about them- it's almost embarrassing when you realize how easy they are to make. I recommend varying on the recipe with some spices, veggies, or even some rice.
