I actually created this recipe out of desperation. My son Charlie was a picky eater when he was young, so I put together some of the things he likes. To this day, he says it's his favorite dish!

Cheddar Chicken Spaghetti Recipe

Ingredients

  • 1 package (7 ounces) spaghetti, broken
  • 2 cups cubed cooked chicken
  • 2 cups (8 ounces) shredded cheddar cheese, divided
  • 1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
  • 1 cup milk
  • 1 tablespoon diced pimientos, optional
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  • Cook spaghetti according to package directions. Meanwhile, in a large bowl, combine the chicken, 1 cup cheese, soup, milk, pimientos if desired, salt and pepper. Drain spaghetti; add to the chicken mixture and toss to coat.
  • Transfer to a greased 13-in. x 9-in. baking dish. Sprinkle with the remaining cheese. Bake, uncovered, at 350° for 20-25 minutes or until heated through. Yield: 6-8 servings.

Nutritional Facts 1 serving (1 each) equals 311 calories, 14 g fat (8 g saturated fat), 68 mg cholesterol, 579 mg sodium, 23 g carbohydrate, 1 g fiber, 21 g protein.

This is such a nice change from traditional spaghetti with marinara sauce! I mistakenly added 2 cups of cheddar to the casserole while mixing all of the ingredients together, so I added about a cup of sour cream to keep it creamy... AMAZING! Even better than the original recipe! Definately worth a try.

Been making this for years and family loves it. I make w/ 2 cans of soup, usually cream of chicken w/ herb and cream of mushroom, use egg noodles instead of spaghetti, and I add a box of frozen chopped broccoli to the noodle/chix mixture before baking. We never have leftovers of this dish.

I made this tonight and it was soooo good and soooo easy! I added some roasted red bell peppers since I didn't have pimentos. I have never made anything with spaghetti noodles other than spaghetti :-) This is certainly a keeper!!

Just made this but used rotini noodles and used an 1 1/2 cans of cream of chicken and topped it with crushed up garlic croutons :) delish!!!

i made this right the first time the changed it a little. spaghetti noodles have to be used. and it needs a little garlic powder. but otherwise it is creamy and dreamy- total comfort food!

Loved this! I used whole wheat pasta, reduced fat cream of chicken, 2% cheese, and added crumbled bacon. It was great! Such a comforting meal, easy, and yummy!

This is very tasty! I modified it to my liking by using 2 cups spaghetti, 2 cans cream of chicken soup, 1 cup of milk, 1 cup of chicken, salt, pepper, garlic powder, pinch of chili seasoning, 1 cup each of cheddar & mozzarella & 1 cup cheddar on top. My kids loved this & gobbled it up & i loved it as well, creamy, cheesey & comforting. YUM!

I am making this for the second night in a row!! I'm using two cans tonight because I like a really thick casserole type dish. I also use more than 2 cups of cheese not sure exactly how much because I just grate it onto the dish instead of a measuring bowl.

I wanted to prepare a pasta dish to help feed a large number of teenagers and adults. I knew others were making Italian pasta dishes with tomato sauces, but my son usually doesn't care for tomato-based dishes, and I figured other kids would feel the same. So I chose this because I thought it would appeal to both kids and adults. I doubled the recipe for my purposes and also made some changes to jazz it up, yet not so much the picky eaters would turn away. For a single batch, I added 5 strips cooked & crumbled bacon, 1/4 tsp garlic powder, and 1/2 tsp onion powder. Instead of pimiento, I used 1/2 cup chopped roasted sweet red peppers. I used 1 cup shredded cheddar cheese and 1 cup shredded Swiss cheese instead of just cheddar. It was a big hit! I heard kids exclaim, "Oh, good! Something without tomatoes!" It was the first dish to disappear, and it was delicious! Adults and kids loved it! I will definitely make again.

YUM!!! Not a ton of creativity, but a quick, easy & flavorful cheesy comfort dish on this cold wet day. I substituted yolk free egg noodles, used reduced fat cheese & cream of chicken and 2 cans of chicken breast for a quicker fix. I also doubled the pepper, added cajun seasoning, onion & garlic powder. Tasted great!
