Cauliflower "Mac and Cheese" Recipe

Ingredients

  • 1 medium cauliflower, 5-inch - 6-inch
  • 3 tablespoons unsalted butter, cut into pieces
  • 1 tablespoon mayonnaise
  • 1 tablespoon yellow mustard
  • 1/2 cup grated Parmesan cheese

Directions

  • Preheat oven to 350°F.
  • Steam whole head of cauliflower for 15 to 20 minutes.
  • Drain and place on a pie plate.
  • In mixing bowl, combine mayonnaise and mustard. Place cauliflower in souffle dish and spread the mixture over it. Dot with pats of butter.
  • Sprinkle generously with Parmesan cheese.
  • Bake uncovered, for about 15 minutes, or until the cheese is brown.

Very good and easy. Did not have mayo so used Greek yogurt with a little vinegar and salt.
