Cashew Topped Asian Beef Recipe

Ingredients

  • 1 lb extra lean ground beef (5% fat),
  • 1 medium garlic cloves, minced
  • 1/2 small onion, chopped
  • 1/2 large red bell pepper, sliced julienne
  • 1/4 cup low sodium soy sauce
  • 8 ounces fresh brown mushrooms, sliced
  • 1/4 cup fresh basil, chopped
  • 1/2 teaspoons hot red pepper flakes
  • 2 tablespoons chopped unsalted cashews

Directions

  • Cook beef, garlic, and onion over medium-high heat five minutes, until meat is browned and onion tender. Drain.
  • Add bell peppers and soy sauce. Saute five minutes or until tender.
  • Add mushrooms and basil. Saute five to seven minutes.
  • Sprinkle with red pepper flakes and top with cashews. Heat thoroughly.
