"My sister-in-law brought this crunchy salad to a potluck and it's been a favorite ever since," says Hamilton, Montana's Tammy Burnham. "It goes with any entree because the sweet dressing is so light. The recipe can easily be doubled for crowds."

Cashew Apple Salad Recipe

Ingredients

  • 1/2 cup confectioners' sugar
  • 1/4 cup Miracle Whip
  • 4 celery ribs, sliced
  • 2 small apples, chopped
  • 1 can (10 ounces) salted cashews

Directions

  • In a bowl, combine confectioners' sugar and Miracle Whip until smooth. Stir in the celery, apples and cashews. Serve immediately. Yield: 8-10 servings.

Easy to make and delicious to eat but the cashews get soggy very quickly. Leftovers aren't that great but there rarely are any.
