Carrot Raisin Salad Recipe

Ingredients

  • 4 cups shredded carrots
  • 3/4 to 1-1/2 cups raisins
  • 1/4 cup mayonnaise
  • 2 tablespoons sugar
  • 2 to 3 tablespoons 2% milk

Directions

  • Place carrots and raisins in a large bowl. In a small bowl, combine
  • the mayonnaise, sugar and enough milk to achieve dressing consistency. Pour over carrot mixture; toss to coat. Yield: 8 servings.

Diabetic Exchanges: One serving (prepared with skim milk and 1 cup raisins) equals 1 fruit, 1 vegetables, 1/2 fat; also, 110 calories, 80 mg sodium, 2 mg cholesterol, 24 gm carbohydrate, 1 gm protein, 2 gm fat.

I add a grated apple and don't add the sugar and milk just the mayo. Have been making this salad for years.

Carrot and raisin salad has always been a favorite. I have never added sugar and would not ever. I always add chopped pineapple which adds natural sweetness. I have also never heard of milk being added and would not as I do not drink milk. In essence, I like the "plain Jane" version so I will stick to that. I love it!

I prefer some pineapple along with carrots and raisins. Without would be a good change, especially if cooking for a group when some don't care for the pineapple.

I love this salad, but no longer eat mayo. I will try it with plain yogurt and Splenda instead. Also, pineapple tidbits - & use the pineapple juice in place of the milk.

My mother made this for us when we were kids and I LOVED it....still do!!! Plus, it's so easy to make and very healthy!!!

This is sooo delicious! My raisins were dried out so I "plumped" them up in the microwave with water in a measuring cup. Made the receipe even more delicious and saved my hard raisins. The raisins stayed plumped all the way until the end of the eating!!

This salad brings back memories of my childhood in the 50's! My mom always had a salad at dinner but lettuce was harder to come by then and carrots were very abundant. We had this salad at least once a week and it was always a treat. Sweet and crunchy and oh so good! Thanks!

I will be making this again, and again.

It's easy to make, take no time at all, and is inexpensive to make for a crowd. Loved the taste!! A refreshing alternative to cole slaw
