Carrot Raisin Salad Recipe

Ingredients

  • 4 cups shredded carrots
  • 3/4 to 1-1/2 cups raisins
  • 1/4 cup mayonnaise
  • 2 tablespoons sugar
  • 2 to 3 tablespoons 2% milk

Directions

  • Place carrots and raisins in a large bowl. In a small bowl, combine
  • the mayonnaise, sugar and enough milk to achieve dressing consistency. Pour over carrot mixture; toss to coat. Yield: 8 servings.

Diabetic Exchanges: One serving (prepared with skim milk and 1 cup raisins) equals 1 fruit, 1 vegetables, 1/2 fat; also, 110 calories, 80 mg sodium, 2 mg cholesterol, 24 gm carbohydrate, 1 gm protein, 2 gm fat.

Such a fresh good salad! Great way to eat raw carrots. I took a previous reviewers advice and added 1/2 Tbsp peanut butter with the mayo, and I used half Miracle Whip half mayo. The peanut butter added such a subtle interesting flavour to it all and you don't need as much sugar!

My mom has made this for years. Called it Navy Salad. (Dad had it in the Navy??) Anyway, she used just Miracle Whip with the carrots and raisins. Would recommend this recipe.

Yummy! I did make a couple adjustments. I didn't have vanilla yogurt, so I added vanilla extract and a packet of splenda to 1/3 plain yogurt. I also replaced the reduced-fat mayo with FF Ranch. It came out very tasty.

Love carrot salad. I also add some cinnamon and snipped dates. Natural sweetness is so much better for us. Yes, I also use crushed pineapple.

I add a grated apple and don't add the sugar and milk just the mayo. Have been making this salad for years.

Carrot and raisin salad has always been a favorite. I have never added sugar and would not ever. I always add chopped pineapple which adds natural sweetness. I have also never heard of milk being added and would not as I do not drink milk. In essence, I like the "plain Jane" version so I will stick to that. I love it!

I prefer some pineapple along with carrots and raisins. Without would be a good change, especially if cooking for a group when some don't care for the pineapple.

I love this salad, but no longer eat mayo. I will try it with plain yogurt and Splenda instead. Also, pineapple tidbits - & use the pineapple juice in place of the milk.

This is sooo delicious! My raisins were dried out so I "plumped" them up in the microwave with water in a measuring cup. Made the receipe even more delicious and saved my hard raisins. The raisins stayed plumped all the way until the end of the eating!!

This salad brings back memories of my childhood in the 50's! My mom always had a salad at dinner but lettuce was harder to come by then and carrots were very abundant. We had this salad at least once a week and it was always a treat. Sweet and crunchy and oh so good! Thanks!

Carrot Raisin salad is so good with the addition of some crushed pineapple. My mom always added cut-up maraschino cherries, and I also use a combination of Miracle Whip salad dressing and mayo--no sugar or milk.

this is the carrot and raisin salad that has been handed down in my family for over 80 years. i do believe that this was a standard recipe that was around for a longer time than that. i use splenda instead of sugar and 2%milk. try it i believe you will like it.

I have been making this for almost 40 years. Carrots, raisins, and Helmans mayo. Plus minture marshmellows. No sugar and no milk. All gone in no time. Very crunchy this way.

I have made this recipe for years for my family and it has been a favorite. The recipe calls for mayo, and that is what it means. Mix the may, sugar and milk and pour over the carrots and raisins. The amount of dressing is directly related to the amount of carrots. You don't want it too "soupy" as the carrots will give off a bit of moisture as it sits. The size of the shred of carrot will also affect the amount of dressing you will need. So only add as much of the dressing mixture to coat the carrots - don't over-dress the salad.

I would think it means the mixture of the mayo, sugar and milk. Combined, these three ingredients would make a dressing.
