Carrot Dip with Pita Wedges Recipe

Ingredients

  • 1 lb medium carrots, cut into 1 inch pieces
  • 1 tablespoon extra virgin olive oil
  • 1 garlic cloves
  • 1-1/2 teaspoons fresh lemon juice
  • 1/2 teaspoons ground cumin
  • 1/2 teaspoons salt
  • 1/4 teaspoons ground cinnamon
  • 1/4 teaspoons ground coriander
  • 1/4 teaspoons ground ginger
  • 1/8 teaspoons ground cayenne (red pepper)
  • 1 teaspoon paprika
  • 2 large whole wheat pitas, cut into 12 wedges

Directions

  • Bring pot of water to boil and add carrots. Cook until tender, about 20-22 minutes; drain and let cool for 5 minutes.
  • Put carrots in blender with the oil, garlic, lemon juice, cumin, salt, cinnamon, coriander, ginger, and cayenne. Process until smooth.
  • Place in serving dish and sprinkle with paprika. Serve warm or at room temperature with pita wedges.
