Carrot Burgers Recipe

Ingredients

  • 1-1/2 cups diced carrots
  • 2 cups crushed cornflakes
  • 2 eggs, lightly beaten
  • 1/4 cup finely chopped celery
  • 1 tablespoon finely chopped onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon sugar
  • 1/8 teaspoon pepper
  • 2 tablespoons vegetable oil
  • Hamburger buns, optional

Directions

  • Place 1 in. of water and carrots in a large skillet; bring to a boil. Reduce heat; cover and simmer for 5-10 minutes or until crisp-tender; drain.
  • In a large bowl, combine the carrots, cornflakes, eggs, celery, onion, salt, sugar and pepper. Form into six patties. Heat oil in a skillet over medium heat; cook patties for 3 minutes on each side or until browned. Serve on buns if desired. Yield: 6 servings.

I hate to waste the heel from a loaf of bread or a few leftover hot dog or hamburger buns. So I cube them into a bowl, spray them with nonstick cooking spray and season with garlic powder, parsley and basil or oregano.
