Caramel-Pecan Apple Pie Recipe
  • Prep: 45 min. Bake: 55 min. + cooling

Ingredients

  • 7 cups sliced peeled tart apples
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • 3/4 cup chopped pecans
  • 1/3 cup packed brown sugar
  • 3 tablespoons sugar
  • 4-1/2 teaspoons ground cinnamon
  • 1 tablespoon cornstarch
  • 1/4 cup caramel ice cream topping, room temperature
  • 1 unbaked pastry shell (9 inches)
  • 3 tablespoons butter, melted
  • STREUSEL TOPPING:
  • 3/4 cup all-purpose flour
  • 2/3 cup chopped pecans
  • 1/4 cup sugar
  • 6 tablespoons cold butter
  • 1/4 cup caramel ice cream topping, room temperature

Directions

  • In a large bowl, toss apples with lemon juice and vanilla. Combine the pecans, sugars, cinnamon and cornstarch; add to apple mixture and toss to coat. Pour caramel topping over bottom of pastry shell; top with apple mixture (shell will be full). Drizzle with butter.
  • In a small bowl, combine the flour, pecans and sugar. Cut in butter until mixture resembles coarse crumbs. Sprinkle over filling.
  • Bake at 350° for 55-65 minutes or until filling is bubbly and topping is browned. Immediately drizzle with caramel topping. Cool on a wire rack. Yield: 8 servings.

My husband and I, whom aren't lovers of fruit pies, absolutely love this pie! It's a tradition now every year for Thanksgiving. You'll only need a little slice, it's very sweet! Definitely worth the time...you need to make this one!!

I made pie for the first time ever today using this recipe ~ The apples came from our very own apple trees. The filling was enough for two 9 inch pies. Delicious! :D I'm inspired for my next pie venture now!

I think the filling is enough for 2 pies. I used the 9in shell like the recipe states. My shell was overflowing and I could barely put the topping on. I'm glad that I put this on a baking sheet while in the oven because the carmel boiled over. I also had to bake it for about 90 minutes. My husband thought there were too many nuts. Overall a good pie though.

I made this for a function at church and it was gone in no time at all. Since then I have been asked time and time again for the recipe...or to bring it to more functions. It's the best apple pie I've tasted. Yummy

This is the first pie I attempted to make on my own as opposed to store bought and I was very pleased!! I got great reviews from my family members who are tough critics! I used a pre-made crust since this was my first pie and I didn't want to get in over my head. I also used half the cinnamon serving as other reviewers suggested and I'm glad I did!! Overall I will definitely be making this again and storing it as my official Apple Pie Recipe!
