This fun recipe, from Darlene Markel of Sublimity, Oregon, is one the kids will find appealing. Children can help by dipping the baked cookies in caramel and nuts and also by eating the treats! "They just disappear at my house," Darlene details.

I doubled this recipe for my son's party. I would recommend making little balls of the filling and freezing it, plus chill the dough. Otherwise, the dough gets really soft and mushy so it's hard to wrap it around the filling. The caramel topping never firmed up much so next time I'll probably use the recipe for caramel apples on the package, which is just to add a little water. I would also turn off the heat and let it cool slightly next time so I won't have to do a double-coat. I would recommend putting them into cupcake liners. It took an hour to cook the filling down to the right consistency and 1/2 an hour to melt the caramels. And 20 minutes to unwrap 2 bags of caramels! :-) Total time: 4 hours.
