Caramel Apple Bites Recipe

Ingredients

  • FILLING:
  • 1/3 cup finely chopped unpeeled apple
  • 1/3 cup evaporated milk
  • 1/3 cup sugar
  • 1/3 cup chopped walnuts
  • DOUGH:
  • 1/2 cup butter, softened
  • 1/4 cup confectioners' sugar
  • 1/4 cup packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • TOPPING:
  • 1 package (14 ounces) caramels
  • 2/3 cup evaporated milk
  • Green toothpicks
  • 1 cup chopped walnuts

Directions

  • In a small saucepan, combine filling ingredients. Cook and stir over medium heat until thickened; set aside to cool.
  • In a large bowl, cream butter and sugars until light and fluffy. Beat in egg. Beat in vanilla. Combine flour and salt. Gradually add to creamed mixture and mix well.
  • Shape dough into 1-in. balls. Flatten and place 1/4 teaspoon filling in center of each. Fold dough over filling and reshape into balls. Place 1 in. apart on greased baking sheets.
  • Bake at 350° for 12-15 minutes or until lightly browned. Remove to wire racks to cool.
  • In a small saucepan over low heat, cook caramels and evaporated milk until caramels are melted; stir until smooth. Insert a toothpick into each cookie and dip into caramel until completely coated; allow excess to drip off. Dip bottoms into nuts. Place on wire racks to set. Yield: about 3 dozen.

These are fantastic. I think the only thing that was a pain was the toothpicks they kept slipping off I think i will try party sticks next time.

Hey, thin4life, if you look at the recipe, it calls for 1/3c. evaporated milk, not 2/3

These are a pain in the butt to make. They are not worth the time they take. If you do make these, don't use 2/3c. evaporated milk in the topping, it is way to runny. I will be deleting this out of my recipe box.

My husband says they taste great, but the process is terrible. There was no way I could shape a 1 inch ball around 1/4 tsp. of the filling. I ended up making bigger balls and still had half my filling left over. The nuts didn't easily stick to the caramel either. And once any caramel dripped into the piles of nuts....those nuts wouldn't stick at all.

I made these for my county fair and received Reserve Grand Champion! They were time consuming, but so darling and they did taste yummy.

These are absolutely adorable, and really yummy. If you're looking for a fun recipe to make with the kids or by yourself, this is it. I didn't alter one thing, and they turned out perfect. I gave this recipe a 4 only because I made my own caramel sauce, so I can't rate this recipe properly. Even though it can be time consuming, the end result is a nifty way to eat a cookie.

I doubled this recipe for my son's party. I would recommend making little balls of the filling and freezing it, plus chill the dough. Otherwise, the dough gets really soft and mushy so it's hard to wrap it around the filling. The caramel topping never firmed up much so next time I'll probably use the recipe for caramel apples on the package, which is just to add a little water. I would also turn off the heat and let it cool slightly next time so I won't have to do a double-coat. I would recommend putting them into cupcake liners. It took an hour to cook the filling down to the right consistency and 1/2 an hour to melt the caramels. And 20 minutes to unwrap 2 bags of caramels! :-) Total time: 4 hours.
