Caprese Chicken with Bacon Recipe

Ingredients

  • 8 Wright® Brand Bacon strips

  • 4 boneless skinless chicken breast halves (6 ounces each)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 plum tomatoes, sliced
  • 6 fresh basil leaves, thinly sliced
  • 4 slices part-skim mozzarella cheese

Directions

  • Place bacon in an ungreased 15-in. x 10-in. x 1-in. baking pan. Bake at 400° for 8-10 minutes or until partially cooked but not crisp. Remove to paper towels to drain.
  • Place chicken in an ungreased 13-in. x 9-in. baking pan; brush with oil and sprinkle with salt and pepper. Top with tomatoes and basil. Wrap each in two bacon strips, arranging bacon in a crisscross.
  • Bake, uncovered, at 400° for 20-25 minutes or until a meat thermometer reads 170°. Top with cheese; bake 1 minute longer or until melted. Yield: 4 servings.

This is the easiest chicken recipe I think I've run across in a while. It was very tasty. As another reader wrote, I minced some garlic and used Italian seasoning and smoked apple bacon. I didn't use salt or pre-cook the bacon, instead I cut each raw piece in half and criss-crossed it on the chicken. A company-worthy recipe!

Oops! Forgot to mention, I, too, cooked the bacon in the microwave and it worked beautifully. For the person who thought this recipe was tasteless, perhaps, using the basil pesto would give it more flavor for you. Still, we think it a wonderful recipe!

This is one of our favorite chicken recipes. I've made it four times now. The first time I didn't have fresh basil, but do keep basil pesto in the freezer. I eliminated the olive oil and spread a couple tablespoons of pesto over the chicken then added the tomato slices and bacon. It was delicious. The last time, I was out of tomatoes and used some drained canned tomato chunks, not as good, but worked. I also split our chicken breasts in half horizontaly for the two of us so the baking time is cut to 15 to 20 minutes. This recipe is so versatile, easy and delicious, no wonder it is Contest Winning!

very good and easy to make...one thing tho, I cooked the bacon in the microwave? and I think turkey bacon would probably be a great alternative.. even my picky kids liked it..

This was delicious and beautiful! Be careful not to overcook the bacon. Hubby doesn't care for tomatoes, so I left them off of his serving.

Should I say what I really feel, or give this a Big Plus rating because it's a "prize winner"? Which is what I believe most of the reviewers must have done. I found this recipe flat, tasteless, utterly lacking in appeal. Sorry. I almost feel guilty speaking my mind on this, but if others agree, perhaps they'll know they're not the only ones.
