Cantaloupe and Yogurt Ice Pops Recipe

Ingredients

  • 1 package (4-serving box) sugar free orange gelatin or any flavor
  • 1/2 cup boiling water
  • 2 cups cubed cantaloupe
  • 8 ounces plain whole milk yogurt

Directions

  • NOTE: This recipe requires 4-6 hours in freezer.
  • In small bowl, dissolve gelatin with boiling water.
  • In blender, combine gelatin mixture, cantaloupe, and yogurt. Cover and blend until smooth.
  • Pour cantaloupe mixture into ten 3-ounce ice-pop molds or paper cups. (If using paper cups, cover the cups with foil. Cut a small slit in the center of each foil cover and insert wooden stick into each cup.)
  • Freeze pops for 4 to 6 hours or until firm.
  • To serve, remove pops from molds, or remove foil from paper cups and tear paper away from pops.

Nutritional Facts 1 serving equals 46 calories, 2 g fat (1 g saturated fat), 38 mg sodium, 5 g carbohydrate, 2 g protein. Diabetic Exchanges: 4-1/4 fat, 1/2 starch, 1/4 vegetable, 1/4 fruit, 1/4 milk.
