Ingredients

  • 2 cantaloupes, chopped, 3 pounds each
  • 1 plain or vanilla flavored yogurt
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon balsamic vinegar
  • 1 ounces honey
  • 1/2 teaspoons chopped fresh rosemary
  • 1/2 teaspoons ground cinnamon
  • 1/4 teaspoons black pepper
  • 1/4 teaspoons salt

Directions

  • In blender, puree cantaloupe until smooth.
  • Add yogurt, lemon juice, vinegar, honey, rosemary, cinnamon, pepper, and salt. Process until smooth.
  • Refrigerate until ready to serve.

Nutritional Facts 1 serving equals 67 calories, trace fat (trace saturated fat), 119 mg sodium, 15 g carbohydrate, 2 g protein. Diabetic Exchanges: 4-1/4 fat, 3/4 fruit, 1/2 starch, 1/4 vegetable, 1/4 milk.
