Camping Haystacks Recipe

Ingredients

  • 1 can (15 ounces) chili with beans
  • 2 packages (1-1/2 ounces each) corn chips
  • 1/2 cup shredded cheddar cheese
  • 1-1/2 cups chopped lettuce
  • 1 small tomato, chopped
  • 1/2 cup salsa
  • 2 tablespoons sliced ripe olives
  • 2 tablespoons sour cream

Directions

  • In a small saucepan, heat chili. Divide corn chips between two plates; top with chili. Layer with cheese, lettuce, tomato, salsa, olives and sour cream. Serve immediately. Yield: 2 servings.

Nutritional Facts 1 serving equals 620 calories, 30 g fat (11 g saturated fat), 61 mg cholesterol, 1,654 mg sodium, 61 g carbohydrate, 10 g fiber, 25 g protein.

We love Haystacs...my kids ask me to make them at least once a month. I throw a couple pounds of beans in the crock pot the night before....and when we get back from church we all chip in chopping the veggies, we also have avacados and chopped onions. I make my own cheese sauce using a blender and blending till smooth and creamy. Raw cashews, pimentos, brewers yeast flakes (you can get at any health food store), onion powder, salt and lemon juice to taste...mmm mmm good and so healtyh!

Have been making this for years both for family campouts and for youth group campouts. It's also great if you want a simple home meal. I purchase the Chili Cheese flavored corn chips, it gives it a bit more zeal. You really can't go wrong.

Great recipe. Stagg chili is awesome in this recipe. They make many different kinds. You're bound to find one that you like. As for the nutrition statement, you can reduce all amounts by using low fat/low sodium ingredients.

I went to private school and they called these "Haystacks" also but vegetarian chili was used I LOVE THEM and make them for my family also!

Never made this, but we called it ' Taco in a Bag' and it was a huge seller at my sons' high school basketball and football games !
