Camping Haystacks Recipe

Ingredients

  • 1 can (15 ounces) chili with beans
  • 2 packages (1-1/2 ounces each) corn chips
  • 1/2 cup shredded cheddar cheese
  • 1-1/2 cups chopped lettuce
  • 1 small tomato, chopped
  • 1/2 cup salsa
  • 2 tablespoons sliced ripe olives
  • 2 tablespoons sour cream

Directions

  • In a small saucepan, heat chili. Divide corn chips between two plates; top with chili. Layer with cheese, lettuce, tomato, salsa, olives and sour cream. Serve immediately. Yield: 2 servings.

Nutritional Facts 1 serving equals 620 calories, 30 g fat (11 g saturated fat), 61 mg cholesterol, 1,654 mg sodium, 61 g carbohydrate, 10 g fiber, 25 g protein.

We call these "Frito Boats"... We slice down the long side of a frito single serve bag. Scoop in the chili, you can add what you like, IE: sour cream, cheese, onions, etc. We eat them camping, but they started at the snack shack during race season. Love them! (oh, I just don't get why some people rate a recipe they a: have never tried; or b: that they would prefer to make so many changes to it that it actually might be called something else. )

I have made haystacks for many years. Like many others, I prefer home cooked beans with onions, garlic, various seasonings and cooked for at least 3 hours to make a nice soft bean. (Black beans are my favorite). Sometimes instead of the chips, or along with them, I cook up some brown rice. It is an easy and can be healthy dish...just depends on the ingredients you use.

Wow, this is a recipe! Who knew. I've been making this for over 30 years, usually the first night of our camping trip, with the veggies already cut up. Heat the chili and we were ready to go. The kids loved it too!

Any recipe that calls for canned chili is really not worth making. I made it with home made chili and it was good. However, as written, it is poor.

This is wonderful on camping trips or even in the car on a trip. Just make it in the chip bag. I do vary the toppings to suit my family. I love the versatility of this. Thank you. I do hate when people complain about the nutrition. If it is too much for you then don't make it. Just don't try to shove your opinion down everyone's throat.

I throw a couple pounds of beans in the crock pot the night before....and when we get back from church we all chip in chopping the veggies, we also have avacados and chopped onions. I make my own cheese sauce using a blender and blending till smooth and creamy. Raw cashews, pimentos, brewers yeast flakes (you can get at any health food store), onion powder, salt and lemon juice to taste...mmm mmm good and so healtyh!

Have been making this for years both for family campouts and for youth group campouts. It's also great if you want a simple home meal. I purchase the Chili Cheese flavored corn chips, it gives it a bit more zeal. You really can't go wrong.

Great recipe. Stagg chili is awesome in this recipe. They make many different kinds. You're bound to find one that you like. As for the nutrition statement, you can reduce all amounts by using low fat/low sodium ingredients.

I went to private school and they called these "Haystacks" also but vegetarian chili was used I LOVE THEM and make them for my family also!

Very easy and yummy, too! One way to make less clean up is to leave the chips in the bag and just dump everything else in the bag, too! Easily shaken up. We use salsa in our's too and Doritos Nacho Cheese chips also are pretty tasty :)

My grandkids loved this, it was easy to make, had all the ingredients on hand. With a bottle of lemonade, it was a winner.Will be good to make again for the summer months.

This is a great, easy dish to make. It's a version of what my mother used to make in the '50s and '60s. She called it "Taco Plate". Good eats!

This is very good. A quick easy meal for those busy nights. As for the nutrition facts, I have to agree with Liz Provencher. If you don't want to make and/or eat this that 's fine. Stop being the Food Police mlujdu and let the rest of us live!

I have made this before and you can go lighter on this. First of all i have made turkey chili and frozen it for camping, then i use everything but instead of the chips being on the bottom i just use them for garnishment and crunch and use more lettuce to make it filling, you can get around the sodium count by making your own chili as for the chips use them sparinly for garnishment. Take an extra hike and you'll burn a serving off in no time. Don't rate it just because of it's nutrtional value no where did it say it was lite, now if would have then you can complain this is about TASTE!!!!

This sounds like a Frito Pie, where I come from. We love them, and eat them often. Makes a quick meal anytime.

EXCEPT, I make this recipe with no-fat-added bean chili. Go lighter by substituting salsa for the sour cream. And go light or none on the cheese. Make the lettuce some good leaf lettuce, not flavorless iceberg. Our family is a mix of vegetarian and vegan, and we eat haystacks often!

FABULOUS-Armour chili is very good. You can also put the ingredients into an indiviual bag of Fritos-we call this a "walking taco"

Have made this for years with my homemade chili. Hadn't used the lettuce and tomato, but a great idea. I gave it 4 stars for using canned chili as written. I'd give it 5 stars with homemade chili.

On the light side...buy corn tortillas and cut into thin strips...bake until crisp and use beans, meat, chopped tomatoes, diced jalepenos, cheese, sour cream, and anything else you want to pile on to the tortilla strips...we call this "Pile On" at our house.
