In our area we are able to camp almost all year-round. My family invented this recipe using ingredients we all love so we could enjoy them on the campfire. This hearty meal tastes so good after a full day of outdoor activities.

Campfire Hash Recipe
  • Prep: 15 min. Cook: 40 min.

Ingredients

  • 1 large onion, chopped
  • 2 tablespoons canola oil
  • 2 garlic cloves, minced
  • 4 large potatoes, peeled and cubed (about 2 pounds)
  • 1 pound smoked kielbasa or Polish sausage, halved and sliced
  • 1 can (4 ounces) chopped green chilies
  • 1 can (15-1/4 ounces) whole kernel corn, drained

Directions

  • In a large ovenproof skillet over medium heat, cook and stir onion in oil under tender. Add garlic; cook 1 minute longer. Add potatoes. Cook, uncovered, for 20 minutes, stirring occasionally.
  • Add kielbasa; cook and stir until meat and potatoes are tender and browned, about 10-15 minutes. Stir in chilies and corn; heat through. Yield: 6 servings.

Nutritional Facts 1 serving equals 535 calories, 26 g fat (8 g saturated fat), 51 mg cholesterol, 1,097 mg sodium, 57 g carbohydrate, 6 g fiber, 17 g protein.

Tastes a lot better without adding corn.

This was very good, but a little bland. When I made it I used bell peppers, as someone else suggested. Then seasoned it with montreal steak spice and a lemon dill blend ... much better.

I was very excited when I came across this recipe I had everything in the fridge or in the pantry and didnt have to run around to get the ingredients. The best part is that this entire meal fed over 6 people and even if I was to buy it all it would be very economical. I had just bought the sack of potatoes a 10 lbs bag $1.00 on sale and the Turkey kielbasa was also on sale for $1.00 each. Corn... forget it, who does'nt have a can in the pantry right now??? I stocked up and later thought what am I going to do with all that. Well thank you for my answer. It was delicious I would definitely make it again and left overs for breakfast with a fried sunny side up sgg over the top of it mmmmmmmmm makes my mouth water.

I make this when we have leftover hotdogs! Only changes: no potatoes, add canned pork n beans, a squirt of mustard, 2 of ketchup and a slice of American cheese. The boys love it so much, sometimes I have to make it by request as a main dish instead of waiting for leftovers! Add a veg and cornbread, ooooo, I'm drooling!!

I have been making a similar version for years. I use sausage or hot dogs , potatoes, onion, cheese and egg. I serve it with buiscuts for breakfast or for dinner. There's never any leftovers.

My mother invented something similar back in the late 1940s except she used sliced hotdogs and cubed potatoes only. We called it "Hot Dog Hash" and us kids loved it!
