Ingredients

  • 1 avocado, pitted and peeled
  • 1 tablespoon fresh lemon juice
  • 1/2 cup mayonnaise
  • 1/4 teaspoons hot pepper sauce
  • 1/4 cup olive oil
  • 1 garlic clove, minced
  • 1/2 teaspoons salt, optional
  • 1 cup torn romaine lettuce
  • 3 ounces shredded cheddar cheese
  • 2 medium tomatoes, diced
  • 2 green onions, chopped
  • 1 ounces green olives
  • 1 cup baked tortilla chips, crushed

Directions

  • In blender or food processor, pulse avocado, lemon juice, mayonnaise, hot pepper sauce, olive oil, garlic, and salt until smooth.
  • In large bowl, toss romaine lettuce, cheddar cheese, tomatoes, green onions, green olives, and corn chips.
  • Toss with avocado dressing mixture just before serving.
