Ingredients

  • 5 medium tomatoes
  • 1 small zucchini
  • 1 small sweet yellow pepper
  • 1/4 cup cider vinegar
  • 2 tablespoons Crisco® Extra Virgin Olive Oil
  • 2 tablespoons minced fresh parsley
  • 2 teaspoons sugar
  • 1/2 teaspoon salt, optional
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried marjoram
  • 1/8 teaspoon pepper

Directions

  • Cut tomatoes, zucchini and yellow pepper into 1/2-in. pieces; place in a large bowl. In a jar with tight-fitting lid, combine remaining ingredients; hake well. Pour over vegetables and toss. Serve immediately. Yield: about 8 servings.

Diabetic Exchanges: One 3/4-cup serving (prepared without salt) equals 1 vegetable, 1/2 fat; also, 49 calories, 4 mg sodium, 0 cholesterol, 5 gm carbohydrate, 1 gm protein, 3 gm fat.
